Unit 3
Lesson 1- What is Sustainability?
Lesson 1- What is Sustainability?
What can you see in these pictures?
Which picture would you like to live in? Why?
What ideas link them?
Where are they similar?
Where are they different?

Task- using the worksheet below (a hard copy will be given to you for this lesson), you and your group will look through the following pictures and choose one to write about. Once you have decided which one you will do you can start to fill out the worksheet. -Describe the things you can see in the picture. Be as detailed as you can!
-Explain what you think is happening in the picture. Why are the things in the image shown like this? -What do you wonder is happening in the picture? What do you wonder might have happened? Or will happen? Carbon Footprint
There are only a set amount of some resources on Earth - once they are gone, they are gone forever! Currently it is estimated that humanity uses 1.6 Earths a year. That means it takes 1.6 years to reproduce what we use in a year....which is clearly not sustainable! We can measure the way in which humanity impacts the world by looking at how much carbon (a natural element) is produced by each person. This is important because too much carbon in the atmosphere causes climate change. Carbon is produced when resources are burned for energy (coal, petrol etc). When we use more resources than we produce, we call this Ecological Overshoot. http://www.wwf.org.hk/en/your_support/act_locally/
Task
What might happen if we continue to exist with Ecological Overshoot? Write a minimum of one paragraph in your I&S exercise book and explain with an example as fully as you can. Keywords Sustainability - The ability to keep doing something forever. Ecological Overshoot - When more resources are used than are produced. Lesson 2 - Which nations contribute most to Ecological Overshoot?
Task 1- Below is a worksheet with 7 new vocabulary phrases. At the bottom of the page are the definitions. In your exercise books, match up the vocabulary phrases with the definitions and write the phrase and the definition together.
Task 2-
|
Ecological Overshoot is where humans consume more of the planets than can be produced. Looking at the predictions of the graph to the left, it could be that we will be using nearly three times what the Earth can actually produce each year in your lifetimes.
Something clearly needs to be done. Task How can we raise awareness of Ecological Overshoot? What impact might it have? Create a flyer to raise awareness of Ecological Overshoot. Think about; Things that people could do to conserve resources What could nations do? What might the world look like if we don't do this? |
Lesson 3 - How can we farm effectively for most food production?
One of the ways in which we can alleviate Ecological Overshoot is by making better use of the land we do have for agriculture (farming)
This project will run until the end of term - what can we grow in that time?
Task 1 - Which vegetables?
Firstly, we must consider what to actually grow. Compile a list of 5 vegetables you could potentially grow in your box garden. Use a drawing to plan out what you will grow, and where in the box you will plant it.
Task 2 - How will we record this?
You must keep track of how you are farming your box. To do that you should share a Google Spreadsheet between you all. You should track the water you use, as well as the "farm" is progressing.
See example below-

Task 3 - Rotas
You need to work as a team here! Design a rota. Your plants will probably need water once a day, but two if it's hot. Who will water and when?
Also, who will add to your shared Spreadsheet and when? You must carefully track your farms progress and record everything!
Marking
You will be judged at the end of the project.
The criteria will be as follows;
-Quality of data tracking (/10)
-Yield of farm (how much you produce versus how much you put in) (/10)
-Organisation/presentation of farm (/5)

Lesson 4 - Why is Food Waste a Problem?
What did you have for dinner last night?
Did you eat all of it?
Food wastage is a huge global issue at the moment - What is it and why is it a problem?

Lesson 5- Presenting Your Ideas
In your groups, create a presentation about food waste. Look at the Padlets we created in the last lesson for inspiration.
How can you make these presentations as exciting and engaging as possible to get your message across in the best way?

Lesson 6 - Farming updates!
How are our projects progressing?
1. Write a reflection that considers the following questions;
What have you done?
What have we learned about yield?
How much water have you used so far?
How much water would you have used if your farm was 10 km x 10km?
How have your impressions changed since the beginning of the experiment?
Has anything surprised you so far? What?
What are you proud of or pleased by so far?
What has the farm made you consider about sustainability and food waste? Explain as fully as you can!
2. Take a photo of your farm so far - and create a google drawing with labels to explain the different elements of your farm. You need to print this off and stick it into your exercise book on the page next to your reflection.

Lesson 7 - How does our food get to us?
A Cacao pod - the seeds will be dried and then go through the process of being turned into chocolate!
When you think about it, some food comes from a very long way away to get to our plates - but what about the distance from growth to manufacture? Let's use an example that surely everyone loves....Chocolate!

Lesson 8 - Fair Trade
So how fair is the sale of Chocolate? Where should most of the money from a bar of chocolate go?
Let's say this bar of chocolate costs $10 (HKD).
Let's say this bar of chocolate costs $10 (HKD).
How much should each stage of production receive of that 10 dollars?
Below is a list of the roles that everyone in the process has-
Farmers:

Government:
Below is a list of the roles that everyone in the process has-
Farmers:
- grow and care for the cocoa trees for three to five years
- harvest the cocoa pods in very hot temperatures
- remove the beans from the pods
- ferment the beans for six days and dry them for ten days
- take the sacks of beans to sell to cocoa buyers.
Cocoa buyers:
- weigh the sacks of beans
- pay the farmer for the beans
- arrange to take the beans to the port.
Importers:
- arrange transport for the beans from Chocolate producing countries (Usually the Ivory Coast, Ghana, Indonesia, Brazil Nigeria, Ecuador) to Hong Kong
- turn the beans into cocoa solids and cocoa butter.
Chocolate companies:
- buy the cocoa solids and cocoa butter
- buy the other ingredients
- make the chocolate bars
- pay for the chocolate bar wrappers
- pay for advertising the chocolate bars.
Shops:
- buy the chocolate bars from the chocolate companies
- sell the chocolate bars to shoppers.
Government:
- charges tax on the chocolate bars.
Task 1
Create a table like the one below in your exercise books (remember to leave enough space to write your comments!)-
Create a table like the one below in your exercise books (remember to leave enough space to write your comments!)-
Now get into groups of 5.
You will each be given a role (one person in each group will have to represent two roles).
Who feels their role should receive the most reward?
It's time to negotiate!
You should all agree on a price for your role and note 1-2 bullet points why you feel that way in the next column - Remember your total can't exceed $10!

Task 3
1. What is Fair Trade?
2. Fair Trade can often be more expensive, but why might it be worth paying that little bit more? List and explain as many reasons as you can!

This is a group project, you can form a group of 2-3 people and work on the assessment together.
Reflecting on your learning from the topics we have covered, you will create and implement your own food sustainability project inside/outside CSS with your group mates. You need to complete a project development booklet individually as the project goes along.
Since your project is about promoting food sustainability, it is suggested to focus on the following aspects:

Since your project is about promoting food sustainability, it is suggested to focus on the following aspects:
- Promoting locally grown food products
- Promoting organic food products
- Reducing food waste inside/ outside CSS
- Recycling of associated waste products - plastic, paper etc.
- Energy Usage & Food Miles
- Buying Fair-trade
Ensure that your group folder has;
-Each students Project Development booklet (stapled please) - MAKE SURE YOUR NAME IS ON IT!
(Your Project Development booklet should include your journals (with images) and your supporting essay)
-Your project work. If this is a website you should write a link to your website in your folder. If this is a poster place the original straight in. If the poster/ work is larger than A4- scan the item and print an A4 sized copy to go in the folder.
